â˘2 1/2 cups all purpose flourÂ
â˘1 tsp cream of tartar
â˘3/4 tsp baking sodaÂ
â˘170gm unsalted butterÂ
â˘1 tsp saltÂ
â˘60gm shorteningÂ
â˘1 3/4 cups caster sugarÂ
â˘1/3 cup caster sugar (for rolling)
â˘1 egg + 1 yolkÂ
â˘1 tbsp pure vanilla extractÂ
â˘1 tbsp ground cinnamonÂ

â˛MethodÂ
1. Preheat the oven to 180°CÂ
2. Line your baking tray with baking paper
3. Combine flour, cream of tartar, baking soda and salt in a small bowl
4. Mix together butter and shortening in a bowl or stand mixer until creamy (about 1 minute)Â
5. Add 1 3/4 cups of sugar and mix again on medium speed until light and fluffy, 2-3minsÂ
6. Add the egg, yolk and vanilla and mix on low speed until combined
7. Add the flour mixture and mix again on low speed until combinedÂ
8. Mix the rest of the sugar (65gm) and the cinnamon together in a small bowlÂ
9. Scoop the dough in 2tbsp portions and coat in the cinnamon sugarÂ
10. Gently press the cookie down on the trayÂ
11. Bake until the sides are set and the tops have cracked 12-14mins.Â
12. Remove from the oven and leave to rest for 10 mins before moving and enjoy đÂ
